Use your fovourite cheese to top.
Seafood Melt

my teen loves this!

2 cups chopped imitation crabmeat
1/2 cup mayonnaise
1/4 cup tangy relish
1/4 cup sliced celery
2 tablespoons finely chopped onion
1 1/4 teaspoon dill weed
4 English muffins halved
8 slices Cheddar cheese

1: combine first 6 ingredients. Mix well

2: Broil cut sides of muffins until lightly browned

3: Spread salad mixture on muffin halves, dividing evenly. Top with cheese (you can tear the slices into strips and criss-cross for a pretty look)

4: Broil until heated thoroughly.

Tip: Prepare ahead, refrigerate, and broil just before serving.

The crabmeat mixture also makes a nice salad when served on lettuce leaves or in hollowed out tomato halves.
