Serving Size: 3 pancakes, 1/4 of sauce

Ingredients
raisins 4 tbsp
water 1/2 cup, or enough to cover raisins
reduced-fat pancake mix 1 cup
reduced-fat semi-sweet chocolate chips 1 tbsp
nonstick cooking spray
apples, peeled, cored, and cut into thin slices 2
vanilla bean (or 1 tsp vanilla extract) 1
cinnamon 1 tsp
low-calorie margarine 1 tbsp
reduced-fat whipped topping 1/4 cup

Preparation Instructions

1. Soak the raisins in water for 30 minutes. Make sure the water covers all the raisins. Raisins will plump up. Drain. Reserve the water for later use.

2. Prepare the pancake mix according to the package directions. Add the semisweet baking chips.

3. Spray a pan with the nonstick spray, then heat the pan over medium-low heat. Sprinkle a few drops of water on the pan. When the water sizzles and disappears, the pan is ready.

4. Drop the pancake mixture onto the hot pan, using a tablespoon each to make 12 silver-dollar pancakes. When the pancake bubbles on top, turn and brown them on the other side. When done, remove from the pan.

5. Spray a pan with nonstick spray and place it over low to medium heat. Add the sliced apples and cook 3 to 5 minutes. Add the raisins, reserved raisin water, vanilla bean (or vanilla extract), and cinnamon. Cook until the liquid is reduced by three-fourths, about 3 to 5 minutes. Then, stirring the mixture, add the margarine until it melts.

6. Set 3 warm silver-dollar pancakes on each plate. Spoon the warm apple mixture over the pancakes. Add a dollop of the nonfat whipped topping, if you wish. Serve.
