Serving Size: 1 cup

Ingredients
1 T peanut butter
2 T lite soy sauce
1 t sesame oil
3 clove garlic, minced
1 t grated fresh ginger
2 c cooked thin spaghetti noodles
1/2 c thinly sliced pepper
1/2 c thinly sliced carrots
1/4 c minced scallions
1/4 bean sprouts
1 ea red pepper flakes to taste

Preparation Instructions
1 In a small saucepan, combine the peanut butter, soy sauce, sesame oil, garlic and ginger. Bring the mixture to a boil, lower the heat, and simmer for 3 minutes.
2 Combine the remaining ingredients and pour the hot peanut sesame dressing over the pasta and vegetable mixture.
3 Chill and serve cold.
