Banana French Toast

One of baby's favorite flavors - banana enhances the appeal of this French toast; nonfat dry milk adds a jolt of protein and calcium. It makes a nutritious breakfast, lunch or dinner as well! Makes 4 slices

1 egg

2 Tablespoons banana-orange juice concentrate

2 Tablespoons apple juice concentrate

1/2 small banana

1/4 cup nonfat dry milk

4 slices low-sodium whole grain bread

Vegetable cooking spray

Combine the ingredients through the milk in a blender and process until smooth. Transfer the mixture to a bowl large enough to hold the bread.
Soak the bread in the concentrate mixture, turning the slices until all the liquid is absorbed.
Spray a nonstick skillet with vegetable cooking spray. Heat over medium-high heat until hot. Reduce the heat to medium-low. Add the bread and cook until the bottoms are nicely browned, about 3 minutes. Turn and cook the second side, about 2 minutes. Serve warm.

*Toddler Servings in 1 slice: 2 whole grain; 3/4 Protein, 1/2 Fruit; 1/4 Calcium

This sounds way to good to waste on toddlers this sounds like Sunday brunch to me

I can toddle quite a bit in the mornings if I haven't gotten enough sleep the night before.
