Cereal Muffins

3/4 cup vegetable oil
2 1/2 cups sugar
4 eggs
9 cups dry breakfast cereal (any kind)
4 cups buttermilk (or equivalent substitute*)
5 cups flour
2 teaspoons salt
5 teaspoons baking soda

Mix oil, sugar, eggs and cereal. In a separate bowl mix dry ingredients. Add these alternately with buttermilk. Mix to incorporate well. Pour batter into greased muffin tins (or line with cupcake papers) until about 2/3 full. If batter seems too thin let it rest for a few minutes and it will thicken. Bake at 400 degrees F. for 20-25 minutes.

This is a good way to use up those few bites of different dry cereals when you don't have enough for a serving. Just put it in a baggie and stick it in the freezer until you have enough to use!
