2 cups cooked, flaked salmon
2 hard-boiled eggs, chopped
1 red or green bell pepper, diced
1 cucumber, peeled, seeded and diced
1/2 cup chopped onion
5 tablespoons mayonnaise, more or less
Juice of 1/2 lemon
1/4 teaspoon cayenne pepper, optional
Salt and pepper

Place salmon and chopped eggs in a large bowl and mix together gently. In another bowl, combine bell pepper, cucumber, onion, mayonnaise, lemon juice and seasonings. Stir until well combined. Pour mixture over salmon and toss lightly to combine. Serve on a bed of lettuce or as a sandwich.

Serves: 4
