Chocolate Crackles esp for Bridget

Ok as promised, here it is

Ingredients
4 cups Rice Crispies
1 1/2 cups icing sugar, sifted
3 tablespoons cocoa
1 cup desiccated coconut
250g copha*


Method
» Combine dry ingredients in a mixing bowl.
» Melt copha gently.
» Cool slightly.
» Pour into dry ingredients and mix well.
» Spoon into paper patty cases.
» Chill until set.

Makes about 24.

*Copha is a brandname for solidified coconut oil here in Australia, in New Zealand it is called Kremelta which is just another brand name.

.that's bc apparently you cannot get it in America which is a shame bc apart from melting the Copha toddlers can make these and they have so much fun eating something they made themselves, lets face it, is it not that hard to stir rice bubbles in chocolate sauce

Or you can use the following recipe that a desperate American lady with a home sick Australian fiance made up to give her 'bloke' for xmas, he said they were very close.

Melt a 12 ounce bag of chocolate chips in a double boiler.(or microwave to melt).
Add 5 cups of rice crispies to melted chocolate, and stir to blend.
Scoop out into mini muffin cups. Let harden.


I tried Bridget, honestly I did try. I even put in a picture so you can see what they look like .

yummmm they sound good.....I wonder if I can make them with margerine instead of the copha...all it is is a solid vegatable oil?

I may have to try and find out.....

Thank you so much...I'll let you know how my "americanized "version turns out.

Now...exactly how much is 250g's....lol!!!

Well an old fashioned 'pound' of butter is 500gms, so I guess it is half a pound
