Yep I did, couldn't be bothered with all the hassle, it takes 30 seconds to cut the crusts off and the meal isn't a battle zone, win/win situation.
When they got to around 2.5-3 years old I started leaving them on but I also started cutting the sandwich into 4 triangles NOT 4 squares, that leaves only one edge of crust on each sandwich not two and it is easier for them to eat closer to the crusts as well.
Sometimes I do, but Hayley has gotten more teeth so now I have started to leave the crust on, she will only have toasted sandwiches, won't eat bread unless its broken up into small pieces and fed to her.
One of my gf's has 5 kids and not one of them would eat bread, but they were perfectly happy to eat toast even cold toast, and lets face it toast is crunchy so you don't need to be cutting crusts off toast. that avoids the problem all together
I don't cut off crusts, mostly because I always toast the bread. For Thanksgiving in Kindergarten, they did a little buffet, and I made little turkey finger sandwiches - for those, I cut off the crusts, because I didn't toast the bread. Then I put the cut-off crusts in the oven for a bit to dry them, and made breadcrumbs.
DH tries to make the kids eat the crusts so they don't waste food but I don't make them because I don't eat it myself. I leave it on unless they ask though because sometimes they'll eat it and sometimes they won't.

I figured that one out a few years back with Maddie and her Grilled cheese. She eats right to the edge and she has gotten really good and picking up after herself.
