Help with late dinners

Kyler just started Karate. The time of the class is 6-7. The kids and I NORMALLY eat dinner between 5:30 and 6:00. Bedtime - 8:00ish.

So... I had to do a little bit of rearranging. Thing is, on the days we have karate, we don't get home until 7:30. Then I don't have dinner on the table until almost 8:00... etc. etc.

What are some quick and easy dinners to prepare on nights like this? Right now, we come home to sandwiches. Or, one night a week, we bring home a pizza. I'm sure as the kids get older, this kind of stuff is going to get more common.

So... what should I do? What do you do??

We has this when Lys had late swim.

I depended on Kev to get dinner ready

I ended up making dinner really early so we ate before and then we'd have a snack after swim.

I'd have dinner ready for 5 and then you should still be out of the house by 5:30, right? Or eat at 4:30 on those nights and have a snack when you guys get home.

Zach is used to a late afternoon snack and then we eat late when Mike gets home. Tonight we didn't get done with dinner until 7:30-7:45. Then he's into the tub and off to bed--in bed by 8"30 usually. We are pretty flexible. If he's had an extra long day he eats early when I get home then Mike gives him a bath and puts him to bed (instead of eating dinner together).

I tried feeding them early and it was a nightmare.
They just wouldn't eat at 5:00. I know it's just 30 minutes earlier... but they wouldn't do it.

So, I tried a snack then... and it seems to work. It's just such a late night. And it takes me so much time to get dinner ready when we DO get home. Ya know?

What I do is make the "snack" a meal. Like cheese and crackers and fruit. That's a perfectly acceptable dinner and maybe they'd eat that b/f they left. Sandwiches are a fine meal too. Heat up some Campbell's soup, or make something ahead of time and just reheat when you get back.

I think your only options are to eat early and get in bed sooner or eat after and just deal with the later bedtimes. I am never one for strict bedtimes. Does Delaney go with you to watch practice?

Whenever Joey has a Scouts meeting or something that will interfere with our normal dinner schedule, I either throw in a pizza and have a quick dinner before we go, or if DH is going to be home, have him do it so it will be done when we get home. If Joey is the only one eating, then he gets a Kid Cuisine TV dinner - a special treat!

Do you have a crockpot. I love crockpots cause you can eat when you're ready and you don't have to keep an eye on it. I just throw stuff in the crockpot in the morning or afternoon then it's ready whenever we are.

We have ball games from 5 - 7:45 and I make dinner before we leave and warm it when we get home. If I dont have time to make it I just brown the hamburger and just add a can of something to it and warm veggies

We do whatever fits for the day! We've done a sit-down meal and if the kids didn't eat well, we took snacks (usually a PB&J) for them to eat on the way home. That way we could put them straight into the bath (if needed) and then to bed. We've also taken sandwiches to eat on the way and once went through McDonald's drive-through and ate in the car. It does seem that if we give them a light lunch that they're ready to eat dinner earlier so maybe that'll work for 'ya.
