I bought a big bag of frozen tilapia and am looking for ways to cook it. I saw Elaines Lemon/garlic one, but I am not a fan of lemon flavoring. This sounds good and easy though.

4 (4 ounce) fillets
4 cloves crushed garlic
3 tbls olive oil
1 onion, chopped
1/4 tsp cayenne pepper

Rub the fish with the crushed garlic, place in shallow non reactive dish. Spoon olive oil over fish until coated. Place the onion on top of the fish. Cover the fish and refrigerate overnight. Preheat oven to 350. If baking the fish, transfer to a 9x13 inch baking dish along with oilive oil, garlic and onion. Sprinkle with cayenne or white pepper. Bake for 30 minutes.

If grilling, wrap the fish, oil, garlic, onion and pepper in foil and place on grill. Doesn't give a time for this way.
