that prevents them from shinking up while they cook? I swear I shaped the patties so they were about 4 inches wide and 1/2 to 1 inch thick and they shrunk into baseballs while cooking!

Hmm I usually mix my beef with a little worschteshire (sp?)(I haven't a clue how to spell that) sauce and I think that helps from shrinking.

I try to buy as lean of beef as possible. I think the leaner beef is the less it shrinks.

Lenora is right. I was going to suggest buying the leaner ground beef.

Plus while cooking, I will continue to flatten out the burger with a spatula as I see it "plumping" up.

Regular hamburger will shrink by 1/3 to 1/2 because of the fat. You can buy leaner meat or try mixing the beef with ground turkey (about 1/2 and 1/2) - can't taste the difference, it's better for you and it doesn't shrink.

the higher the quality of your meat (extra lean versus regular ground beef) will make a difference too. Regular ground beef has way more fat in it and moisture, so when you cook them up, they shrink
