Banana Pecan Loaf

Banana Pecan Loaf
1 3/4 cups all purpose flour
1/2 cup sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup very ripe mashed banana
1/3 cup unsweetened applesauce
2 large egg whites
1 large egg
1/4 cup chopped pecans

1. Preheat oven to 350. Spray a 9"x5" loaf pan with nonstick cooking spray.

2. In a large bowl, combine flour, sugar, baking powder, baking soda & salt.

3. In a medium bowl, mix mashed banana, applesauce, egg whites and egg with a fork.

4. Stir banana mixture into flour mixture just to moisten. Spoon batter into pan, sprinkle with chopped pecans.

5. Bake 40 to 45 minutes. Cool loaf in pan on wire rack for 10 minutes. Remove loaf from pan, cool completely.

Each slice: 2 gr. total fat (0 gr. saturated), About 110 calories, 3 gr. protein, 22 gr. carbohydrate, 13 mg. cholesterol, 140 mg. sodium

Lori, I made two of these tonight. They look great. I tweaked the recipe a little. Added some more pecans to the batter since my parents sent us a bunch from Florida, and some vanilla and cinnamon to the batter also. Then because I was giving one to my aunt b/c she always helps me with my kids and when we were in Fl she found these pecan stresel muffins she loved, I put brown sugar and whole pecans on top of the loaves. Basically, I took your really healthy recipe and added some more sugar! Thanks for posting this. It was just what I was looking for.

My husband had some warm last night and said it was really good! Technically it's still low fat (no oil) just some extra sugar. I used the Splenda brown sugar. If you haven't tried it you should. You can't tell the difference. It's 1/2 brown sugar and 1/2 Spenda.

I've never even heard of Splenda brown sugar. I'll have to look for it at the store the next time I go. Thanks for the tip!

It's really a good recipe....dense and reallly moist! A winner! And easy to mix up. I mixed it all in one bowl.

I don't think I've even tried this recipe. I think I got it from my MIL.
