It's just amazing what you can come up with when you're halfway through preparing something and realize you're missing a key ingredient.

Sloppy Joe Casserole
serves 4-6 (depending on how hungry you are)

1 pound lean ground beef or ground turkey
seasonings for meat (I use a little garlic powder and some dried minced onion)
1 16-ounce box of noodles (I used radiatore - sometimes called "nuggets")
1 can Manwich Sloppy Joe sauce
6 slices cheddar cheese (or use grated - just cover top of casserole with cheese)

Preheat oven to about 350 degrees.
Brown the meat with desired seasonings and drain. Cook the noodles and drain. Combine meat, noodles, and Sloppy Joe sauce and mix thoroughly. Pour into 9x13 pan. Top with cheese.
Bake for about 30 minutes, or until cheese has melted.

Yum!

Actually, I was going to make a casserole with chopped tomatoes, but discovered there were none in the pantry.

It was a big hit - there were no leftovers (even DS wanted seconds!)

Sounds good. Printing it up to give it a try.

So you substituted Manwich sauce for chopped tomatoes? That is good thinking. I love it when an experiment is a success. I'll have to give this a try.
