A take-out favorite made easy at home.
4 cups hot cooked instant rice (cooked as directed on package)
3 eggs, beaten
2 Tbsp sliced green onions
9 oz.pkg. frozen sweet peas, thawed
4 oz. can tiny shrimp, drained, rinsed
4.5-oz. can sliced mushrooms, drained
3 Tbsp purchased stir-fry sauce
While rice is cooking, spray large skillet generously with cooking spray. Cook eggs and onions over medium heat, stirring constantly, about 2 minutes or until eggs are firm.
Add all remaining ingredients, including cooked rice, to skillet; cook and stir 2 to 4 minutes or until heated through.
