Sammie picked this one out of a cookbook the other day to make for dinner. It was really easy, and everyone loved it.
1 box Chicken Flavored Rice (I used Rice a Roni)
2 tbsp Butter
1 tsp Italian Seasoning
2 cups Water
4 boneless skinless Chicken Breasts
2 cups of Broccoli
1 tomato chopped
1 cup Cheese
Melt the butter over medium heat, add the Rice (minus the seasoning packet) and brown (about 5 min). Next stir in the Italian Seasoning, the seasoning packet from the rice, and the water. Bring to a boil. Once it's boiling lay the chicken breasts on top (next time I'm trying chicken tenders... just easier with the girls) reduce heat to low, cover and simmer.
Chop the veggies during this time... 10 min later, stir in veggies, replace lid and cook for 10 more minutes. Verify that your chicken is cooked through (mine was) and add the cheese on top. Turn off the heat and set the table.
Serve up yummy yummy! The girls all loved it.
