My husband loves (and requests) these pancakes and he doesn't tend to like stuff that sounds like health food.
1 1/4 cup whole wheat flour
2 TBS sugar
2 tsp baking powder
1/2 tsp salt
1 1/4 cup milk
1/4 cup natural peanut butter
2 TBS olive oil
1/4 cup applesauce
*1/2 to 1 mushed banana
Combine flour, sugar, baking powder, and salt in mixing bowl. Mix remaining ingredients together separately until well combined. Pour mixture into dry ingredients and mix until evenly moistened. Cook pancakes on lightly greased griddle in 1/4 cup measures. Cook until golden brown on both sides.
Note: It is important to use the 1/4 cup measure to measure out the pancakes because otherwise they are hard to flip. When they are ready to flip, they don't bubble like regular pancakes. When they're ready to flip, you'll notice a narrow 'dryer' looking ring around the edge of the pancake. It make take some trial and error to figure out when they're ready to flip.
