Pepperoni Chicken

Our weater girl does a Dish of the Week every Thursday and this was yesterday's ...

Ingredients:

4 (or more) boneless/skinless chicken breasts
1 & 1/2 pounds of pizza pepperoni
1 can bread crumbs
5-6 roma tomatoes
1 box angel hair pasta
1 small jar minced garlic
2 bags shredded mozzarella cheese
1 large jar of Ragu spaghetti sauce
4 eggs
2 sticks butter
1 loaf French or Italian bread, unsliced
Italian seasoning

Prep: Instructions for cooking pepperoni chicken.Mix bread crumbs, parmesan cheese and other spices together. Cut a pocket into the chicken breast and stuff it with pepperoni. Dip chicken into egg wash, then dip into seasoned bread crumbs. Fry chicken in extra virgin olive oil until lightly brown. Place chicken in baking dish and bake at 350 for 45 minutes. Remove from oven and place more pepperoni on top along with a few slices of roma tomatoes, Ragu pasta sauce, and shredded mozzarella cheese. Bake for an additional 15 to 20 minutes.

For the angel hair pasta: Cook the noodles until al-dente. Melt a stick of butter, of course, and mix it with the minced garlic. Then toss the cooked pasta in the butter and garlic.

For the garlic bread: Cut the loaf in half and again, melt 1 stick of butter (of course), and mix it with the garlic. Sprinkle some Italian seasoning on the bread and bake for about 10 minutes. Sprinkle the remaining mozzarella cheese on the bread and viola! You have Parma Fire Department's Lee Brass' favorite meal!

She was making it at the firehall at 6 in the morning and I wanted it!! Turkey/beef (I don't eat pork) pepperoni won't be as greasy and they were cooking with pork and it still looked yummy. We are wanting to make this ASAP.

Italian Five-Cheese Chicken Roll-Ups

1 cup KRAFT Finely Shredded Italian* Five Cheese Blend, divided
2 oz. (1/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1/4 cup finely chopped green peppers
1/2 tsp. dried oregano leaves
1/4 tsp. garlic salt
4 small boneless skinless chicken breast halves (1 lb.), pounded to 1/4-inch thickness
1 cup spaghetti sauce



PREHEAT oven to 400°F. Mix 1/2 cup of the shredded cheese, the cream cheese, peppers, oregano and garlic salt until well blended. Shape into 4 logs. Place 1 log on one of the short ends of each chicken breast; press into chicken lightly. Roll up each chicken breast tightly, tucking in ends of chicken around filling to completely enclose filling.
PLACE, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray. Spoon spaghetti sauce evenly over chicken; cover with foil.
BAKE 30 min. or until chicken is cooked through (170°F). Remove foil; sprinkle chicken with remaining 1/2 cup shredded cheese. Bake an additional 3 to 5 min. or until cheese is melted.
