Chicken Nuggets

1 package of boneless/skinless chicken thighs (can use breasts, but thighs are cheaper)
Approx 2 cups of bread crumbs (I use homemade)
1 egg
1 cup water

Preheat oven to 375
Cut thighs into nuggets (about 2-3 inch chunks)
Mix egg and water
Coat chicken in egg wash
Put bread crumbs into a baggie or on a plate
Coat egg washed nuggets with bread crumbs
Place on cookie sheet
Cook approx 20-30 minutes (depending on the size of your nuggets)
Serve with fries and a salad

A variation on this is Italian Nuggets. Chunk up the chicken and marinate in italian dressing for at least an hour (I prefer several hours to overnight - gives it a better flavor). Coat with Italian breadcrumbs. You can make you own by adding italian seasoning to plain breadcrumbs. Cook as above. I serve with palin buttered egg noodles (for the kids) and simply make and italian butter sauce for the grownups. Add a salad and you're done.

You can make just about any variation of these that you like. Sweet-N-Sour sauce is great to serve with the plain ones or add sesame seeds to the breadcrumbs for a more asian flavor. (Also, you can add about a tsp of soy sauce to the wash for more intense flavor, but Ally doesn't like this so I skip it).

Cajun seasoning is also good. Serve with red beans over rice.

Mexican - use about 1/3 pkg of taco seasoning to add to bread crumbs (or make your own). Serve with Mexican rice (rice with a can of drained mexican corn and a touch of tomatoe sauce)

You can also fry these, which is better for dipping. I tend to make up 3-4 packages at once and then freeze them. They all you have to do is heat them up for a really quick lunch or dinner.

I like chicken nuggets too..Its healthy diet.
