DELICIOUS CHICKEN CASSEROLE
2 to 3 cups cooked rice
1/4 cup chopped onions
3 tablespoons butter
4 chicken breast halves, boneless and skinless
1 package (10oz.) frozen broccoli florets, thawed
8 oz. mozzarella cheese
1 can cream of chicken soup, condensed and undiluted
1/4 cup chicken broth or water
1 to 1/2 cups seasoned stuffing mix
1/3 cup butter, melted
Salt and pepper, to taste
Preheat oven to 350°F. In a skillet, sauté onions in 1 tablespoon butter. Combine with cooked rice; salt and pepper to taste; set aside. Add chicken breast to same skillet with remaining butter; season with salt and pepper; brown on both sides. Grease a casserole dish about 9 by 11 inches. Place cooked rice mixture in casserole; spread evenly over bottom of dish. Layer broccoli over rice. Then layer sautéed chicken breasts over broccoli. Slice cheese and cover tops of chicken. Mix undiluted soup and chicken broth together. Pour over the top of chicken; sprinkle stuffing mix over all. Drizzle melted butter over top of ingredients. Bake, uncovered, about 25 minutes or until chicken is tender and the stuffing is lightly browned.
