Lemon Pepper Wings
2 1/2 lbs. Chicken Wings
Rind from 2 Lemons (grated)
Juice from 2 Lemons (about 1/2 cup)
1 tsp. salt
2 Tbs. Cracked Black Peppercorns
1/2 cup Olive Oil
Place wings in a plastic bag and add the Lemon Juice, let stand for 2-3 minutes. Add all other ingredients, squeeze to mix, then let stand 2hours or more. Knead periodically. Remove wings and save marinade. Grill wings basting w/ marinade occasionally till the wings are golden and tender. Serve immediately. (Heat the marinade to boiling for a few minutes in the microwave before using to baste with as a safety factor.)
