Family Classic Meatloaf

Makes: 6 servings

1-1/2 lb. extra lean ground beef
1 can (10-3/4 oz.) condensed tomato soup, divided
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 egg, lightly beaten
1 onion, chopped
1 tsp. dried thyme leaves
1/4 cup chili sauce

PREHEAT oven to 350°F. Mix meat, 1/2 cup of the soup, stuffing mix, egg,
onion and thyme. Press evenly into 8x4-inch loaf pan sprayed with
cooking spray.

BAKE 55 min.

HEAT remaining soup with chili sauce in small saucepan. Spoon over
meatloaf just before serving.

Great Substitute:
Substitute ground pork for the ground beef.

Notes:
Instead of buying chili sauce, just add a little bit of water and a dash
of chili powder to the tomato soup.

I don't really like the tomato soup in the meatloaf - too acidic for me. And if I wasted stuffing on meatloaf the kids might try to hang me up by my toes! LOL! You can do the same thing by using stale bread, tho. Great way to use it up.

DH loves Tomato soup, so he really likes this meatloaf. I'll try the stale bread thing next time.

I love tomatos soup, too. It's one of my favorites, but my tummy just has trouble with it. Cream of tomato is easier to handle. Wonder if that would work? Are you mixing the soup like you would eatit or using it straight from the can?

I've started using brown gravy instead of the tomato soup, since I can't handle the acid. It's really good! Plus it goes well with the stuffing or mashed potatoes the kids want to go with the meatloaf.

One more thing! I was in a hurry a few weeks back, so I made mini-meatloaves in my mini-bread loaf pans. Cooked in about half the time and just as good! The kids thought it was cool they got a whole meatloaf to themselves! LOL! Altho I couldn't eat a whole one, nor could Ally, it was perfect for the guys.

I can throw in a few ingredients that anyone can use with any meatloaf receipe.

Parmasean cheese also works with the breadcrumbs
Worchester or soy sauce tastes very yummy mixed in the meat also will help moisturize it.

Watch out when you use Worchestershire sauce or soy sauce if you are watching your sodium. They are both loaded with it, especially soy sauce. But they do give it a great flavor! I use low sodium soy, which cuts the sodium down about half. But Worchestershire sauce give the best flavor, I think. Just don't use too much - it can easily overpower the other flavors.
