Crockpot Roast Beef and Gravy

2-1/2 lbs of boneless beef tip roast
1 cup of balsamic vinegar
3 cloves of garlic, minced
Salt and pepper
2 Tbsp of herb de Provance

Mix all the ingredients together and pour them over the beef in a crockpot. Simmer on low for 7 hours. Use the drippings from the beef later to make the gravy, mixing 2 tbsp of flour into the drippings.
