Potato Soup – Crockpot - Freezer
1 large onion; chopped
1 bunch of green onions; finely chopped
2 celery ribs; finely chopped
8-10 baby carrots; sliced
1 small can cream of mushroom soup
10 cups of potatoes; peeled, diced and cooked
1 pint whipping cream
chicken stock
shredded cheddar cheese
salt and pepper to taste
Cook potatoes, celery, onion and carrots in chicken stock until tender and set aside. Drain half of chicken stock and discard. Add cream of mushroom soup and mix with electric mixer. Add enough whipping cream to give desired consistency - usually one pint is enough. Add salt and pepper to taste. Garnish with chopped green onions and shredded cheddar cheese.
Easily frozen prior to adding green onions and cheese. I usually cook everything in the crockpot and then use mixer right in the crockpot.
