INGREDIENTS (Nutrition)

* 1 (10 ounce) package frozen mixed vegetables, thawed
* 4 small potatoes, peeled and chopped
* 1 (16 ounce) package Polish beef sausage, cut into 1/4 inch slices
* 1/4 cup butter, cut into pieces
* 1 tablespoon lemon pepper
* 1/4 cup shredded Cheddar cheese



DIRECTIONS

1. Preheat oven to 375 degrees F (190 degrees C).
2. Spread mixed frozen vegetables out in the bottom of a lightly greased 9x13 inch baking dish. Mix in potatoes and sausage and cut pats of butter evenly over mixture. Sprinkle with lemon pepper and cover with aluminum foil.
3. Bake at 375 degrees F (190 degrees F) for 50 minutes. Open foil carefully, place cheese over the top and allow to melt.

I helped dd make this for dinner tonight. I am trying to teach her math through cooking since drill and repetition don't seem to be working. We made it lower in fat by using low fat turkey sausage and vegetarian cheese.

Sausage and potatoes with a bit of onion is good. I just don't see it with the veggies, tho. You "fry" up the potatoes and sausage (I just use Pam spray in the electric skillet). Slice the taters thin, diagonal cuts for the sausage, about half an onion (diced). Toss it in and let it cook over medium heat, stiring occasionally. Quick, easy and pretty yummy. I normally start the tater first (with a little salt, pepper and garlic on them) since they take longer. Then put the rest in and mix, then cook.
