A delightful salad proving there is elegance in simplicity.

11 oz.can mandarin orange segments
*1/2 cup sour cream
1/4 cup honey mustard
10 oz. pkg. fresh spinach leaves
1 lb. shrimp, cooked, peeled and deveined
1/2 cup red onion, sliced thin
Sliced almonds (optional)

Drain oranges, reserving 2 Tbsp of liquid. Combine sour cream, mustard and reserved orange liquid. Arrange spinach on serving platter or individual dinner plates. Place shrimp, onion slices and oranges over spinach. Drizzle with sour cream mixture. Sprinkle on sliced almonds. Serve immediately.
