nonstick vegetable spray

1/2 cup whole wheat flour

1 1/4 cups all-purpose flour

1/2 cup packed brown sugar

2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. ground nutmeg

1 1/4 cups ripe banana

1/3 cup honey*

1/4 cup skim milk

Preheat oven to 350 degrees. In a medium mixing bowl, sift together flours, brown sugar, baking powder, baking soda, and nutmeg.
Use a fork to mash bananas in a small bowl. Stir in honey* and milk. Add banana mixture to dry mixture, stirring just until slightly moistened.

Spray loaf pan with nonstick vegetable spray. Spread banana bread batter evenly in loaf pan. Bake 40 to 45 minutes. Banana bread is done when a toothpick inserted in center comes out clean. (Makes one loaf.)

This recipe is egg-free, nut-free, and vegetarian.

*Note: Honey should not be fed to babies under age 1, because of botulism poisoning risk.
