Quick & Easy Shrimp
1 lb. cooked peeled deveined shrimp, fresh or frozen
1 medium green pepper cut into strips
1 medium onion, sliced
1 clove garlic, minced
2 tablespoons melted margarine or cooking oil
1 can (10 3/4 ounces) condensed tomato soup
1/3 cup water
2 teaspoons lemon juice
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon hot pepper sauce
3 cups cooked rice
Thaw shrimp if frozen. Cut large shrimp in half. In a 10-inch frypan, cook green pepper onion and garlic in margarine until tender. Add soup, water, lemon juice, pepper, and liquid hot pepper sauce. Simmer 8 to 10 minutes stirring occasionally. Add shrimp and heat thoroughly. Serve over rice. Makes 6 servings.
