Salmon Patties

2 cans (7 1/2 oz. each) salmon, drained and flaked
1 cup crushed saltine crackers
1 large egg
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 to 1/2 cup vegetable oil

1. In a medium bowl, mix together the salmon, cracker crumbs, egg, salt and pepper, breaking up the salmon well. Shape the salmon mixture into five 3-inch patties...make sure they are firm.

2. In a large, heavy skillet, heat the oil over medium-high heat. Place the patties in the skillet. Cook until browned on both sides, about 5 minutes total. Drain on paper towels.

We use Bisquick instead of crackers ... but it is making me hungry!!

I'm going to try to make these tonight.

What would you eat with Salmon Patties????

I used to make creamed peas until my kids started refusing to eat peas. The next time I make salmon patties I'll probably make macaroni and cheese from a box.
