Ingredients:
2 small acorn squash
1 1/2 cups chopped cooking apple
1/4 cup chopped celery
2 Tablespoons chopped walnuts
1 Tablespoon sugar
1/2 teaspoon cinnamon
salt
Directions:
Cut squash in half length- wise; remove seeds. Place squash halves, cut side down, in a shallow baking dish. Bake at 350 degrees for 40- 45 minutes or until almost tender. Meanwhile, stir together apple, celery, walnuts, sugar and cinnamon. Turn squash cut side up. Sprinkle lightly with salt. Spoon apple mixture into squash. Bake, uncovered, about 25 minutes or until apple is tender.
