Tomatoes, tomatoes all over the place!!

HELP!!!! We have tons of tomatoes & I don't know what to do with them all. I've made a bunch of tomato/spaghetti sauce, but I'm not sure what to do with the rest.

Does anyone have a nice MILD salsa recipe to share?? I think some salsa would be yummy!

You can also make some Pico de Gallo. I don't have a recipe with measurements. Just a dash of this and that. Tomatoes, onions, garlic, a little lime juice, jalapenos, and cilantro. That is my absolute favorite! (Can you tell it's my lunch time?)

I can find a recipe if you need one.

Easy Salsa

Chop up as many tomatoes as wanted
Add cilantro (either fresh or dried) to taste
If you like mild, do not add many or any jalepenos
1 chopped onion
3-4 cloves chopped garlic
salt/pepper to taste


I puree mine, because DH won't eat tomato chunks. Let sit at least 24 hours in fridge, taste and add more seasoning as needed.

I love fresh salsa!!

Kim you can pass some of those fresh tomatoes over here...I have to eat the YUCKY store bought ones!

I would LOVE to send ya some of my tomatoes, Michelle! My DH went a little overboard.... we have 48 plants. Yep, 48 of those puppies! LOL!

Kim, are you sure our husband's aren't twins? Separated at birth maybe?

My DH planted about 30 plants -- half regular tomatoes, and half cherry tomatoes. They're yummy ,but there's really a limit to how many pounds of tomatoes I can eat...

My salsa recipe is fairly vague, too:

Tomatoes (at least 6 big ones) chopped
Onion (1 medium) chopped
1 clove garlic minced fine
2 serrano chilies seeded and minced fine

Chop everything up, throw it in a container, and refrigerate for 24 hours before eating.

If you like your salsa a little less chunky, throw some of it in the blender or food processor, process until as smooth as you want, and add it back in.

If it comes out too hot, add more tomatoes.

I bet so.... they are BOTH "Chris the Tomato KING!"
My Chris did actually 48 roma tomato plants & 6 best boy tomato plants. So, actually we have 54 plants.
