2 cups milk (use 1 c. heavy cream and 1 c. water) or half and half
4 eggs
1/2 cup Splenda
1/2 cup unsweetened coconut
1 teaspoon vanilla

Heat the cream/water mixture. Beat eggs w/Splenda. Gradually add the hot cream. Mix well. Stir in coconut and vanilla.

This makes 4-5 ramekins -- spray them with Pam.

Put the ramekins in a hot water bath -- Bake in 350 degree oven 40-50 minutes until set.
