quick, simple and easy casserole recipes that can be divided (after cooking) into individual portions. My SIL (DH's older sister) is having surgery next week and I want to make up some casseroles for her to have during her recovery.

hey, my SIL has a great recipie for lasagna, i guess instead of using lasagna noodles she uses bow ties.... and no layering.. just mix it all together and put the cheese on top!
says it is great for her kids lunches... i don't do lunches yet so i haven't tried it...

Macaroni Tuna Casserole [Post #1]

Ingredients:
1 package (7 1/4 ounces) macaroni and cheese
1 can (10 3/4 ounces) condensed cream of celery soup, undiluted
1 can (6 ounces) tuna, drained and flaked
1/2 cup milk
1 cup (4 ounces) shredded cheddar cheese

Prepare macaroni and cheese according to package directions. Stir in soup, tuna and milk. Pour into a greased 2- quart baking dish. Sprinkle with cheese. Bake, uncovered, at 350 degrees for 20 minutes or until cheese is melted.

Yield: 4 servings



I double this recipe because I have to feed a family of five. When I double the recipe I use a family size box of macaroni and cheese, one can of cream of mushroom soup, one can of cream of celery soup and a 7.06 ounce envelope of tuna. I double all the other ingredients. My picky kids don't even realize there is tuna in it.

Cheeseburger-and-Fries Casserole [Post #1]

2 pounds lean ground beef
1 10-3/4-ounce can condensed golden mushroom soup
1 10-3/4-ounce can condensed cheddar cheese soup
1 20-ounce package frozen, fried crinkle-cut potatoes
Hamburger toppings (choose from catsup, pickles, mustard and chopped tomato)

1. In a large skillet, cook the ground beef, half at a time, until brown. Drain off fat. Place the cooked meat in the bottom of a 13x9x2-inch baking dish.

2. In a medium mixing bowl, combine the condensed golden mushroom soup and the condensed cheddar cheese soup. Spread over the meat in the casserole.

3. Sprinkle the frozen crinkle-cut potatoes over the top of the casserole.

4. Bake in a 350 degree F. oven for 45 to 55 minutes or until the fries are golden. Garnish with suggested hamburger toppings, if you like. Makes 8 to 10 servings.

Krista, I copied both of those last night when I was looking thru the recipes! But keep'em coming!

My main problem is finding things that will freeze easily and warm up easily.

I think I will try the lasagna thing. That could be a good one! Sounds easy to make and I know lasagna freezes well. Thanks!

Shepherds Pie is good.

It is just cooked chopped meat on the bottom layer then a can(drained) of corn on top of that. The top layer is mashed potatoes..you can make flavored instant...about 2 bags..then cover with cheedar cheese. Bake it and freeze. When it is frozen you can cut it up into portions. Every thing is cooked before it is put into the oven at 350 until the cheese is melted.

I was going to say Shepards Pie also. It freezes well and is yummy. I add a layer of cheese between the corn and potatoes.

Rice Casserole

4 cups rice, cooked
1 stick butter
4 green onions, chopped
2 cans cream of mushroom soup
4 ounce jar sliced mushrooms, undrained
1 cup slivered almonds
10 ounces shredded cheddar cheese


Cook rice according to directions on package.
Melt butter and sauté green onions. Add soup. Stir well.
Pour mixture over rice and add mushrooms and almonds. Mix well.
Put half of mixture in a 1-1/2 quart casserole. Cover with half the cheese; then add the rest of the mixture and top with the rest of the cheese.

Bake at 350° for 20 minutes or until cheese is melted on top.

Quick and easy!!

Cabbage Roll Casserole

I don't measure anything so this is all approximate! These measurements are for a family of 6 approximately.


1 lb ground beef
1/2 onion, chopped
1/2 head of cabbage, chopped
2 Cups white rice, cooked
1 can tomato soup

Cook beef in a skillet with onion until beef is done. Add cabbage and cook till tender. Meanwhile, cook your rice. When everything is done stir all ingredients together. Salt and pepper to taste. Put in a casserole dish and pour tomato soup over the top. Bake in a 350 degree oven covered for about an hour.

We love this at my house. It's one of the few things that makes everyone happy. Even all the leftovers get eaten!

Chicken Manicotti

1 jar (26-30 oz) spaghetti sauce
1 teaspoon garlic salt
1 1/2 pounds chicken breast tenders
14 uncooked manicotti shells (8 oz)
2 cups shredded mozzarella cheese (8 oz)
Chopped fresh basil leaves, if desired.

Heat oven to 350 degrees. Spread about one-third of the spaghetti sauce in ungreased rectangular baking dish 13x9x2

Sprinkle garlic salt on chicken. Insert chicken into uncooked manicotti shells. Place shells on spaghetti sauce in dish.

Pour remaining spaghetti sauce evenly over shells, covering completely. Sprinkle with cheese.

Cover and bake about 1 1/2 hours or until shells are tender. Sprinkle with basil.

7 Servings.

Microwave Ravioli Casserole

1 pound ground beef
1 small onion, chopped (1/4 cup)
2 cans (15 oz each) beef ravioli
1 cup shredded Cheddar cheese (4 oz)

Crumble beef into 2 quart microwavable dish. Add onion. Cover loosely on High for 3 mins- stir. Cook for additional 2-3 minutes or until beef is no longer pink: drain.

Stir in ravioli. Cover tightly and microwave for 3 minutes- stir. Cook for additional 2-3 minutes or until hot. Sprinkle with cheese. Cover and let stand for about 5 mins or until cheese is melted.

6 servings.

I hope everything is okay with your sil and her surgery goes well. Here is my favorite dish- really good and freezes well.

Chicken Enchiladas

2 cans Cream of Chicken Soup
16 oz sour cream
1 sm can of diced green chilies (good with and w/o)
2 cups chopped cooked chicken (more is okay)
1 tsp garlic powder
Shredded cheese (optional)

Preheat oven 350 degrees. Cook chicken in frying pan until cooked. Combine Cream of Chicken Soup, sour cream, diced green chilies, and garlic powder in a bowl. Spread approx 3 Tbl of mix on a cookie sheet (cover cookie sheet with foil for easy clean up). Set approx 3 Tbl of mix aside to put on top.

Add cooked chicken into the rest of the mix. Put approx 2 Tbl of chicken mix on each flour tortilla and place in pan.

Put the remainding mix on top of tortillas. Cover with Shredded Cheese (optional).

Cover with tin foil and bake for 30 mins @ 350 degrees.

Lazy Man's Cabbage Rolls

(I don't measure any of these at all, so it all depends on what you like)

Just Shred some cabbage and boil to soften
Brown your hamburger, add onion and garlic and bacon and whatever seasonings you would like to use

In a big pot or bowl mix together the above along with minute rice, and then add either tomatoe Soup or tomatoe sauce (I prefer tomatoe sauce). Mix all ingredients well together.

Place into cassarole dish. Top with some more tomatoe sauce and strips of bacon and bake in oven at 375 for about an hour or so (until you think it may be done...i have had this vary in different ovens depending on how much you have made). Basically all you need to do is cook the rice......to save time you can always pre-cook your rice and mix it all together, adn then you just have to cook it to blend flavours and heat it all up.
