Our local Albertson's had a great sale on Alaskan pollock, so I worked out this recipe for it. Even DS liked it!
Pollock Bubbly Bake
Adapted from a recipe on www.allrecipes.com
2 pounds pollock, divided
1 (10.75 ounce) can cream of celery soup, divided
1 onion, thinly sliced
1 (4 ounce) can mushroom pieces, drained, divided
1 cup shredded Cheddar Cheese
Preheat oven to 350 degrees. Lightly butter a 2-quart casserole dish (or spray with non-stick spray).
Arrange 1 pound of pollock on the bottom of the prepared casserole dish. Layer ½ of onion slices and ½ of can of mushrooms over fish. Spread ½ can of soup over onions and mushrooms. Repeat with remainder of fish, onion, mushrooms, and soup.
Top with shredded cheddar cheese.
Bake in preheated over for about 40-50 minutes, or until bubbly and fish flakes easily with a fork.
