Orzo is a pasta, each piece of which is the size and shape of a grain of rice. When cooked it about quadruples in size. It tastes especially well in this recipe. I love the light, creamy consistency.
___ 1/2 bunch asparagus (snap off hard ends)
___ 1 cup broccoli florets
___ 1 cup cauliflower florets
___ 1/2 pound orzo
___ 1 tbs olive oil
___ 1 English cucumber, diced
___ 2 tbs soy sauce (we use the reduced sodium kind)
___ (optional) a few Chinese appetizers like egg rolls or wonton (we just pop a few ready-made frozen appetizers in the oven)Steps:
If you plan to have some Chinese appetizers with this meal, put them in the oven before you start so they're ready when the rest of your meal is.
Steam or microwave asparagus, broccoli and cauliflower until crisp tender. Do not overcook.
Cook orzo according to package directions.
When orzo is done, drain and add to a large bowl. Add the olive oil and toss to coat.
Top the orzo with the steamed vegetables and the cucumber.
Add the soy sauce and toss lightly.
Divide evenly among plates, along with the appetizers if you've chosen to include them. Enjoy!
