Adapted from recipe in Cooking with 5 Ingredients
2 cups uncooked pasta, such as elbow macaroni or mini penne
1 (14 ounce) can diced tomatoes, any flavor, undrained
2 cups shredded cheese, divided
2 tablesppons sugar
1 (4 ounce) can mushrooms
Cook pasta according to directions; drain. In large bowl, combine pasta, tomatoes, 1 1/2 cups shredded cheese, sugar, and mushrooms. Mix well.
Pour into a 9 x 13 baking dish, and sprinkle remaining 1/2 cup cheese on top.
Bake at 350 degrees for 30 minutes or until bubbly.

You can do this with a Mexican flair if you use shredded Mexican cheese and tomatoes with peppers, or with an Italian flair using shredded pizza cheese and tomatoes with garlic and oregano, etc.
