1 small onion, chopped
2 tablespoons margarine
2 1/3 cups water
2 packets hot apple cider mix
1 cup uncooked regular rice
2 medium apples, peeled and chopped
1 large stalk celery, sliced
1/2 cup coarsely chopped pecans
Bring water to a boil. Add cider mix; stir, and remove from heat.
Saute onion in butter until tender. Add hot apple cider; bring to a boil. Stir in rice; cover, reduce heat, and simmer 20 minutes. Add remaining ingredients, cover, cook an additional 5 minutes on low heat (longer if there's more moisture), then remove from heat and let stand, covered, for 5 minutes.
