When you're sick of tomato sauce, and don't want a cream sauce, this is excellent.
Adapted from a recipe found on www.fatfree.com
2 packages frozen chopped broccoli (10 ounces each)
1 onion, minced
3-4 cloves garlic, minced
1 can chicken broth
Salt and pepper to taste
Saute onion and garlic in a little broth until soft.
Put packages of broccoli into a saucepan, with remaining broth, and heat to defrost, breaking up occasionally.
Add onion and garlic mixture, and broccoli (with all broth) to blender - blend until smooth. Return to saucepan. Add a dash or two of lemon (original recipe called for "juice of one lemon"), and salt and pepper to taste. Heat through.
Sauce should be very smooth and thick.
Serve over cooked pasta with parmesan cheese if desired.
Side Note: To add a little fiber to the meal, I added a can of well-rinsed kidney beans, and for flavor, a can of mushrooms. Looked weird, but it was still good.
