12 Manicotti shells, cooked and drained
1 pkg (10 oz) frozen chopped spinach, thawed
1 tbsp chopped green onions
1/4 tsp ground nutmeg
1 cup low-fat cottage cheese (we used ricotta instead)
1/4 cup skim milk
2 tsp chopped fresh parsley
1 egg white
2 cups tomato sauce
1/2 tsp garlic powder
3/4 tsp dried oregano
1/2 tsp dried basil
2 tbsp grated Parmesan cheese

Preheat oven to 350 degrees.
Cook the spinach, onions and nutmeg in a small amount of water and drain. Mash the cottage (or ricotta) cheese with skim milk and parsley and add to spinach. Beat egg white with a fork until frothy and add to spinach mixture. Combine remaining ingredients and cook over low heat 3-5 minutes. Stuff spinach mixture into manicotti shells. Spoon a layer of tomato sauce on the bottom of a baking dish and arrange stuffed shells on top. Pour remaining sauce over manicotti and sprinkle with Parmesan cheese. Bake, covered for 30 minutes.

Makes 6 servings.
