since I started eating better and not eating as many carbs and eating more fruits and veggies and high protein. Will this stop or can I expect this over a few days.
I think it might last a couple of days until your body gets used to the fruits and veggies. Depending on exactly what fruits/veggies you're eating they can give you a little of the big D.

I had pasta less spaghetti for lunch and grape nuts trail mix for breakfast been like this for the 2nd day now
Yeah, the extra fiber you're eating, in the form of fruits and veggies, can be causing it. Certain types can make that worse - I know I always have bathroom issues when I eat apples or grapes in quantity.
I think if you keep up with the diet changes your body will adjust to it over a period of time (hopefully not a long one).
